Our Eat Local Philosophy

Our two Garrison properties, The Garrison and Highlands Country Club, support the idea that strong local economies are the lifeblood of healthy communities. We believe that a vibrant system of interdependence between local producers and consumers helps shape local culture, and that the character of the local culture in turn helps determine a community’s landscape.

We are in the business of bringing people together to enjoy the bounty of both our local and regional communities, the Hudson Highlands and the Hudson Valley. Whenever possible, our food and beverage is sourced within these areas through relationships we continue to develop with independent producers. Our two restaurants, Valley and Tavern, endeavor to reflect the flavor of this region through the foods, beers, wines, spirits, produce and other artisanal products that its growers produce.

Chef Jason at Tavern satisfies appetites for traditional country preparations with his refined comfort food while our team at Valley pursues a contemporary fine dining menu of inspired American cuisine.
We rely on our own farming operation, called Garrison Farm, for much of the vegetables and herbs used in our restaurants and at our banquet events. In 2008, we are supplementing these efforts through a joint collaboration with Project Renewal, a non-profit New York City-based organization that provides everything homeless men and women need to move from the streets to health, home and jobs. One of their work programs, RENEWAL FARM, is now located on The Garrison property. Here participants in their program who once lived on the street or in homeless shelters learn to nurture their own lives while cultivating an acre and a half of naturally grown herbs and vegetables that they sell to our restaurants and at local farmers' markets.
